Single-Hop Pale Ale Recipe

With the new hop harvest here, it’s time to find out what all those hops you’ve never heard of will do for you. That’s right, single-hop pale ale time! Here’s a base recipe that I’ve been using this year, with good preliminary results. The base generic recipe is below, followed by a couple examples of what I’ve done so far (and what I’m going to do soon). Note: IBU calculations were done with the Tinseth formula and a full-wort boil. I actually weigh out everything in grams, so some of the ounce amounts were rounded up to the nearest quarter ounce.

Single-Hop Pale Ale
Base Recipe (all-grain)
5.5-gallons, OG = 1.050, FG = 1.013, SRM = 9.02, IBU = 40

Grains
6.25 lbs Weyermann Pale Ale malt (65%)
1.00 lbs Weyermann Light Munich malt (10%)
1.00 lbs Weyermann Light Wheat malt (10%)
0.50 lbs Weyermann Carahell malt (5%)
0.50 lbs Dingemans Caramunich malt (5%)
0.50 lbs Weyermann Melanoidin malt (5%)

Hops
0.75 oz your choice of hops (first wort)
x.xx oz your choice of hops (60 min)*
0.50 oz your choice of hops (15 min)
0.75 oz your choice of hops (5 min)
1.00 oz your choice of hops (end of boil or hopback)
0.75 oz your choice of hops (dry hop for 10 days)
[*Note: All hop additions remain the same except for the 60-min hops. Calculate the IBUs of your choice of hops for all additions, subtract from 40, and add that many IBUs for the 60-min hops.]

Other
0.50 oz gypsum in mash (as needed)
0.75 oz (1 tablespoon) pH Stabilizer in mash (as needed)
1 whirlfloc (15 min)
1 Servo (15 min)

Yeast
Your choice (I’ve used Wyeast 1056 and 1026 as well as Safale S-04 & US-56 and Nottingham, with very good results.)

For my Amarillo hops (7.8% alpha) and Centennial (8.0%), here’s what I did:
0.75 oz Amarillo/Centennial (first wort)
0.50 oz Amarillo/Centennial (60 min)
0.50 oz Amarillo/Centennial (15 min)
0.75 oz Amarillo/Centennial (5 min)
1.00 oz Amarillo/Centennial (end of boil or hopback)
0.75 oz Amarillo/Centennial (dry hop for 10 days)

For Sterling (6.1%), I’m planning on:
0.75 oz Sterling (first wort)
0.75 oz Sterling (60 min)
0.50 oz Sterling (15 min)
0.75 oz Sterling (5 min)
1.00 oz Sterling (end of boil or hopback)
0.75 oz Sterling (dry hop for 10 days)

For Glacier (4.6%), I’m planning on:
0.75 oz Glacier (first wort)
1.50 oz Glacier (60 min)
0.50 oz Glacier (15 min)
0.75 oz Glacier (5 min)
1.00 oz Glacier (end of boil or hopback)
0.75 oz Glacier (dry hop for 10 days)

For Cascade (4.0%) and Liberty (4.0%):
0.75 oz Cascade/Liberty (first wort)
2.25 oz Cascade/Liberty (60 min)
0.50 oz Cascade/Liberty (15 min)
0.75 oz Cascade/Liberty (5 min)
1.00 oz Cascade/Liberty (end of boil or hopback)
0.75 oz Cascade/Liberty (dry hop for 10 days)
