Wet Mill

Thursday, February 9th, 2006

Boulevard Brewing Company.here in KC is going to a wet mill for there grain.

Mill - A new wet mill will replace the existing dry mill. Wet milling involves steeping
the malt prior to cracking. With wet milling, the malt endosperm can be crushed to a finer degree
which increases the efficiency of converting starch to sugar, but because the husks are wet
and pliable, they stay more intact. The result is a more efficient filter bed for lautering (even
with finer endosperm particles) and the extraction of fewer astringent phenolic flavors from the
husk. A fourth benefit is a lower degree of oxidation of the malt which will improve flavor stability
in the final beer.
Don’t think this is new but was wonding about the home brewer. Anybody been down that road.

Sounds like something to come up with makes sense. Maybe thats whats scary.
