1 lb Crystal 40
2 lbs Cane Sugar
1.25 lbs Malto Dextrine
.5 oz Willamette FWH
.5 oz Willamette 60 min.
1 gal apple juice to top off in primary
S-04 yeast

5 gallons

Well, I’m not sure what to expect with this one. I’m kind of shooting from the hip, trying to get something slightly sweet with a little apple flavor. I do not expect cider, just apple-tasting beer. We’ll see how it goes.

Dirty little secrets:

I’m not talking beers that are universally known as terrible. I’m talking about the ones that get all the hype and people seem to all love them. Yet you just don’t enjoy it… and feel a little awkward for it.

A few come to mind in my case. I’m sure there are more. Maybe its the sweetness… well not a complex sweetness, but the overbearing all crytal malt sledgehammer I just can’t get past. Rogue Dead Guy Ale and Sierra Nevada Pale Ale. Yes folks… it’s out of the closet. I just don’t really like the taste or aroma of SNPA.

I picked up a six pack of SNPA ‘cuase it had been forever. All the rave seems to be SNPA clones. I’ve still got a few bottles and I really not thrilled about finishing them.
