Went to visit the family in the great north last week. Borther says to me “yo I got a box of draft stuff that was given to me that you can have, do you want it”. My bottom lip starts to quiver and I eek out at “sure lets take a look”. He even throws in a 71 Plymouth GTX model. Sweet!



How that for a haul? Gotta love it when family especially from afar thinks of you.

Questions about hops

I seem to be obsessing over hops, dunno why.

Anyhoo, what hops do you keep in the deep freeze at all times, and why? I ask because i’d like to keep a stock of hops for their flexibility of use. I keep pale and pils grains on hand at all times, and a few staple others, but don’t know what hops to keep constantly on hand.

Went out to eat the other night, I can’t get enough of restaurant beer lists :>) I asked my server what kind of beer they had, she replied, “we pretty much have everything, what do you want?” I said “Okay, I’ll take a Stone IPA”. She said “Let me get the list”. I ordered Heineken, it was the most exotic beer they had :>0 Gotta love some people definition of EVERYTHING!

Hop steeping question.

Hey all you hip cats & cool kittens! Today’s questions are related to a Northern Dark Mild. I want to brew a winter solstice ale using a basic northern dark mild recipe. It’s typical, but I did want to steep some hops for the aroma. I’m using beersmith as my brewing software with a grain bill as follows:

8.5 #s Maris Otter
1 # Caramunich
.25 # Choclate

1oz Fuggles @ 60 mins.
1oz Liberty @ 10 mins.

1 oz Fuggles ‘Steeped for 90 mins.’
1 oz Liberity ‘Steeped for 90 mins’

My first question is banghead.gif what is the correct process for steeping hops, and my second is scratch.gif when and where in the process do I add the hop tea?

MLT thermoclines

I bought some fittings for my keggle and one of them is the combination volume level gauge and thermocouple gauge like seen here:

I’d like to put it as low as possible to give indication of volume at small volumes (I don’t want to have to put in 4 gallons before i see the gauge move) but I’m wondering if this will give me high readings in my mash while heating.

I’m probably overthinking this, but before i drill holes… does it matter? Will i get a significantly hotter reading at the bottom than at the middle?

Kill my yeast on purpose?

If I want to kill my yeast in the secondary so that the addition of fruit does not restart fermentation. How can I bottle condition? what can I do to carbonate? (kegging not an option).

should I add more yeast? what type? the cheap $1.50 stuff?

What to do with my Barleywine

Hi,

I just got an outlook reminder that let me know the BW sitting in my basement in secondary will be 1 year old next week.

I’ve never brewed or tasted a BW before. So, what should I do with?

My options are :

1 - KEG it and serve from Tap
2 - Keg it, Carb it, then bottle using my BeerGun
3 - Pitch some new yeast and bottle the traditional way

Anyone Keg these bad boys?

Sanitation Solution

My wife is an emt, and all they used was a very small amount of bleach in a 1 to 100 ratio to sanitize the ambulance after their shift.

Is there any reason a 1/100 solution of bleach and warm water couldn’t be used as a sanitizer?

Glut of hops

I just saw this article about hop growers having too much to sell.

The hops shortage of 2007 is over, buried in a glut of unsold hops…but hops prices are now so low that some Oregon and Washington growers left hops unharvested this fall.

The article is mostly about how even though the price of hops is coming down, the price of beer is not likely to change.

My question is, are the price of hops at your LHBS going down or up of staying the same? I plan on asking my LHBS when their hop prices are going to drop and see what they say.

I just looked on HopsDirect and found that the fuggle hops that I paid $2.5/oz at the LHBS are $9.75/lb

I need to buy some of that plastic tubing for transfers from HLT->MLT->BK and was thinking of the stuff that is used in industrial coke machines at restaurants. What is that called?

Help Brewing Golden Draak Clone (Yeast Question)

going to brew an all grain golden draak clone soon.
basing recipe off of the one in the book clone brews.

any suggestions on picking between 1388 Belgian Strong Ale or 3787 Trappist High Gravity Yeasts?
i would like both ester and phenol flavor and aroma leaning a little less towards esters. (used to make a tripel that was very estery and want to try something different)

i have a temperature controlled fermenter so i can control things well.

i have never just let the fermentation temp rise naturally…would would this affect flavors?

Pictures of home brewing setups?

Newbrewb here. Never brewed a single batch, but with how much I enjoy grilling & gardening, I thought it would be the time to try something new given that I am tired of drinking the pisswater that is miller/bud/etc. I am a huge fan of blue moon, new castle, guiness, and the like. Rumor has it, you can find recipes online to emulate your favorite beers for a fraction of the cost! If soo, HORAY!!! I am ready to get started smile.gif

To tell you a little about myself, I prefer to build my own things. While the kits maybe cheaper or downright easier, I’d like to create my own brewing operation in my garage. I’ve heard that a 5 gallon operation is the way to go, however, I’d like to setup a 10 gallon operation, just because I’m pretty much set in my ‘go-big or go-home’ mentality.

I have a general understanding of what goes into it, feel free to add anything that might be missing to my list:

Wurt Station
*I’m looking considering just using a turkey fryer setup to brew the wurt in the driveway. The pots look like they are at least 20-30 qt, and I’m hoping to find one that is 40 qt. Naturally, it would be propane fired.

Fermentation Container
*Should be dark to minimize light
*Needs to maintain 78 degrees (I live in the south, so a simple heating contraption should be able to maintain that. On our coldest days, the garage may get down to the 40s - so a simple heating apparatus should be able to maintain 78 degrees)
*Obviously, would hold 10 gallons.
*Spigot, hoses, valves attached to well filtration system to filter sediments directly from fermenation container to bottling

Bottling/Kegging
Question: I’m not sure what bottling method I should use. Should I find a keg to use? 10 Gallons is a lot to put into bottles. If I did use bottles, I’d probably use 2Liter bottles. Of course, the last thig I want is exploding 2Liter bottles, so it may be better to just use a keg. If I go with the bottles, I know I’ll need to get the following:
*Bottling wand
*Bottle sterilizer
*Bottle Rinser
*Tons of bottles

The last piece of advice I am looking for is what to start out on? Does it matter if it is a lager or ale (In other words, is one harder to brew than the other?) Finally, can anyone recommend a good recipe that will start out good. I’d like to eventually move on to emulating my favorite beers, but for now, I am content with just starting my first batch, and having some good beer to drink. Blichmann TopTier

I started lookin into the Blichmann TopTier Brewstand and seems to get bad mouthed around the net. Of course, the people doing the bashing have not used one. LOL.

Anyone use one or have any suggestions on other stands/systems. I have some pretty extensive experience on a Brew-Magic system and would love to have one for myself, but really can’t justify that kinda spend with my wife right now. She’s making us go to Hawaii over thanksgiving. BLAH!

hops growing question

I was thinking of getting involved with the campus botany club since I can’t grow my own hops at home. Here are some questions the club president has, although I think I know the answers already.

“…if you need a few males to make fruit? What is the preferred ratio? And when do you divide the rhizomes? (fall vs. spring)… “

From what I know males are unnecessary, and If I am not mistaken rhizomes are divided in the spring. At least that is when they seem available for sale!

stainless braided hose for MLT

I’m setting up my MLT as a sanke keg and was thinking to just buy a stainless braided line attachment instead of making a copper loop with holes or buying a false bottom.

Pardon me if this is being a bit too OCD of a question, but if this braided line just lays on the bottom and exits through the fitting which is a couple inches FROM the bottom, I presume this means a couple of quarts of wort will be left down in the bottom of the grain bed as it won’t exactly flow uphill. The tube being braided won’t support a siphon (again, i’m assuming.)

Do I need to run a short bit of copper from the fitting through the bulkhead down to the bottom of the keg and THEN attach the braided line or is it something to just live with that some wort will be left in the bottom?

I guess grain is cheap, I could account for the loss and just make enough so the liquid in the very bottom wouldn’t matter.

Please advise.

To weld ? or not to weld…

I got my 100 qt pots and now its time to get some thermometers and ball valves installed on the. My question is this. How many of you use the weldless 1/2 mpt bulkhead vs how many of you have permanent welded threads on your pots… How do you feel about what you have and how well do they work for you. I know the weldless stuff makes cleaning more detailed but i can foresee problems with it at the same time. PLease let me know what you think/feel or have heard.
